Squishy Date & Coconut Energy Balls

What I love about these no-junk energy balls is they are really simple to make, perfect for when the sweet tooth strikes, and you can create infinite combos of flavour to suit your tastes, the ratio of wet to dry works with any flavour of ingredient.
Today I made date, coconut & cardamom, because I loooove these as flavours together.
Makes: 8 small/medium balls
What you'll need:
1 cup of your 'dry' ingredients - I used a mixture of mixed nuts, chia seeds, the crushed seeds of a few cardamom pods, unsweetened cocoa powder & some desiccated coconut to coat the finished balls in
Other ideas: dried fruit, oats, coconut, any variety of nut or seed
1/3 of a cup of your 'wetter' ingredients - I used dates (If your dates aren't soft, soak them for 10 minutes in warm water before using and then discard water), coconut oil & date syrup
Other ideas: A nut butter, honey, maple syrup, some fruit zest. Keep in mind that the more runny your wet ingredients are, the less you may need. Add little by little until a nice mouldable texture is formed.
Throw everything (apart from the topping if using one) into a food processor and blitz until well blended, keeping a little texture to the nuts.
Roll into individual balls and then roll into the desiccated coconut.
Store in the fridge so that the dates go all caramel-y and delicious, or pop in the freezer.
Tips, Notes & Ideas:
You want the mixture to be sticky enough to roll, but the right consistency to keep its shape. How sticky you would like them to be is ultimately up to you and your taste. Adjust ingredients accordingly. They will firm up when put in the fridge/freezer.
If the mixture is sticking to your hands, put a little coconut oil on your hands first.
If you don't have a processor, finely chop all solid ingredients and mix well.
